Avocado Cucumber Veggie Smoothie Recipes - Are you into V8? Honestly, I’ve always balked at the idea. I mean, I love tomatoes and all, but pureed into a glass sounds like a pretty bad idea to me. But, I have to admit, the whole “get your veggie servings in a glass” thing definitely sounds appealing. I’m always on-the-go and even if I did, I probably wouldn’t have time to eat a million servings a veggies a day.
So, I figure, maybe a veggie smoothie would be a nice shorcut? I’m a bit nervous about it but, if I’ll be blending things once a week I need to get creative! And hey, maybe I’LL be the next V8 genius, who knows?!?
OK, maybe not. But I am gonna try out this recipe below. If you do, or have a better one, let me know your thoughts.
Slight disclaimer: I have found out through a bit of digging that the secret to a tasty veggie smoothie is to throw a bit of fruit in there. But hey, whatever works!
Avocado-Cucumber Veggie Smoothie
* 1/2 avocado
* 1/2 cucumber
* sSme baby spinach
* 1 apple (or apple juice)
* For a little sweetness, throw in some strawberries!
