* 1oz (30g) unsalted butter
* 1 small white onion (chopped)
* 2 tablespoons plain flour
* 1 cup each gravy
1 cup chicken stock
* 1/3 cup dry white wine
* 1/4 cup dry marsala


Firstly melt butter in a sauce pan over medium heat add onion and cook until you start to see some color, add the flour and cook for approx 30 seconds it is now time to add the gravy, dry wine and stock. Bring to the boil the reduce back to a low simmer for about 5 minutes.Now add the marsala wine and simmer for an additional minute. Keep in fridge and heat when ready to serve.
