Best Easy Mandarin Orange Cake Recipe - My family loves this cake. It is a cool and very refreshing cake. I know others may have a different way of making this, my mother does and it doesn’t taste like this! I also experiment and add flavored Cool Whip® and other pudding flavors.

Cake...
* 1 box yellow cake mix
* 1/2 c. oil
* 4 eggs
* 1 small can mandarin oranges with juice



Banana or Coconut Frosting
* 8 ounces Cool Whip®
* 1 box banana or coconut instant pudding
* 1 small can crushed pineapple

Directions:

Combine cake mix, oil, and eggs.

Add mandarin oranges.

Beat all ingredients together.

Pour into a greased 9x13-inch pan and bake at 350 degrees for 30 minutes, or until done (test with a toothpick).

Remove from oven and allow to cool completely.

Frosting

Directions:

Mix together pudding mix and pineapple.

Stir in Cool Whip®. Spread frosting over cake. Store in refrigerator.
